These cookies, I have to say, are THE BEST. Being not overly sweet, full of good stuff, high in wonderful protein and oils and the perfect slightly chewy decadent treat these cookies make a wonderful snack anytime.

This makes about 12 small cookies

You need:

  • 2 Tbsp. coconut oil
  • 2 Tbsp. coconut sugar (or raw sugar, honey, maple syrup – all work well)
  • 1 egg
  • A dash of vanilla essence
  • 2 cups hazelnut meal
  • A block of dark chocolate

Method:

Preheat oven to 160 degrees Celsius fan forced and line a baking tray with baking paper.

In a small saucepan melt the coconut oil, add sugar (or alternative sweetener) and stir. Pour into a bowl and add egg and vanilla and stir until all is combined. Add hazelnut meal and stir until mixture becomes a sticky batter.

Using a spoon and your hands create balls (using about 1 Tbsp. of batter per ball), place on your baking paper and press each down slightly to flatten (only slightly). Break up your block of chocolate and add a piece to each cookie. Then bake for 10-15mins. Cookies are ready when ever so slightly golden and firm but not hard (they are amazing when still slightly soft in the middle). Allow to cool and keep in an airtight jar or container.

Gestational Diabetes –

These cookies can be very suitable and wonderful for women with GDM. I’d suggest one modification – either omit the chocolate or use sugar free choc chips (up to 50g is fine). If making 12 cookies, and if not adding chocolate at all, 1-2 cookies is a very suitable and nourishing snack for in between meals. If adding sugar free chocolate chips, then 1 cookie is fine to enjoy between meals and for some women 2 may be fine.
