If you love porridge but prefer a cold (and very easy and fast to make) breakfast, overnight oats are perfect. This recipe is easy plus a nice alternative to the standard simple overnight oats; the mix of oats and rice flakes creates a lovely texture and lightness. I love to add seeds and nuts, and fruit too.
Serves 1
You need:
- 1/4 cup oats
- 1/4 cup rice flakes
- ~ 1 Tbsp. seeds
- ~ 1 Tbsp. nuts, chopped
- Cinnamon
- 3/4 cup milk
- 1/2 cup frozen rasberries (or other berries)
Topping ideas:
- yoghurt
- fruit
- honey/maple syrup
- coconut
- seeds
- nuts
- nut butter
- tahini
To make:
Mix all the ingredients in a bowl, cover and refrigerate overnight. In the morning remove and top with whatever you like e.g. yoghurt, honey, extra fruit, seeds, etc. So easy and so yum.

Gestational Diabetes –
Oats are fantastic for those with GDM, and for pregnancy and in fact for many of us! This recipe is great, I’d suggest a few adjustments for if you have GDM – it’s fine to use 1/4 cup rolled oats and 1/4 cup rice flakes but I’d suggest using 1/2 cup milk (not 3/4 cup) and adding some water (1/4 cup). 1/2 cup of raspberries or mixed berries is fine. You can also add a few Tablespoons of plain unsweetened Greek yoghurt when serving. I would suggest not adding any sweetener to this but you can add extra nuts/seeds. This serve is suitable for many women with GDM.
