We love these. For breakfast, as a snack or dessert. You can use Weet-bix, flour, almond/coconut meal/flour and any type of berries. The recipe is easy and flexible, and these pancakes freeze and defrost well. They are worth trying for your little one/s and the whole family.
You need:
1 banana
1/4 of a zucchini, finely grated (with moisture squeezed out)
1 egg
1/2 a Weet-bix (I recommend these), broken up finely (or.. 1.5 Tablespoons of oatmeal/quick oats, flour, almond meal/flour, see note further below for details)
Cinnamon (a little shake/pinch)
Blueberries, a handful frozen
To make:
- Mix together the mashed banana, zucchini and egg, then add the weetbix and cinnamon and mix in. Add a handful blueberries, and your mixture is ready.
- In a pan, add butter or olive oil and once hot (using medium heat) add spoonfulls of mixture (see photo below). When you begin to see little bubbles in the pancake and the edges firm up flip then over. Pancakes should be golden on both sides.. they dont take very long to cook.
- Serve as is, or spread with nut butter or yoghurt. They are nice cold too, as a snack. You can also serve warm with yoghurt for dessert. They freeze well too. Worth making for sure!
Tips:
- You dont have to add berries, these are lovely with too (see third photo below – a much loved afternoon for Ella and Walter)
- You can add any type of berry – chopped strawberries/frozen mixed berries for example
- If you dont have Weet-bix you can use oats (I suggest ground up rolled oats/quick oats or oat flour), OR almond flour/meal OR plain flour – if using flour/meal/fine oats I suggest using 1.5 Tablespoons
