These muffins are so wonderful. Easy to make, quick to cook, delicious and full of good things. Our two year old is currently not a huge fan of vegetables (not uncommon amongst toddlers) so I try to include vegetables where I can. Grated carrot works really well in these, as does grated pumpkin. I also often add grated zucchini (tip: squeeze first, to remove moisture). You can also add spinach, try frozen spinach, just defrost then also squeeze out moisture before adding to mixture.

This recipe is very flexible, you can also add other things such as a sprinkle of rolled oats, chia seeds, dried berries or a spoon of nut butter.

You need:

1 ripe banana (the riper the better)

1 egg

1 heaped Tablespoon of Greek yoghurt

1 Tablespoon coconut oil, olive oil or melted butter

A little dash of vanilla essence – optional

1/4- 1/3 cup of grated vegetable e.g. finely grated carrot, zucchini (squeeze all moisture out), raw pumpkin or spinach (tip: if you have a fussy toddler I’d suggest starting with carrot or pumpkin, rather than using three types of vegetable)

3/4 cup self raising flour (I like to use wholemeal), note: you can also use SR gluten free flour

A sprinkle of cinnamon (or more)

Optional: frozen berries (a good handful)

Method:

Preheat your oven to 200 Degrees Celsius (not fan forced).

Mix all your wet ingredients first (mashed banana, egg, yoghurt, coconut oil or other oil/butter, vanilla and grated veg)

Then add you dry ingredients (SR flour and cinnamon).

Mix all, but be careful not to over mix. If you like, add some frozen berries and fold in.

Spoon mixture into a mini muffin try (this mixture should make 10-12 muffins)

Bake at 200 for 5mins, then turn your oven down to 180 and bake for another 7-10mins.

Muffins will be ready when golden on top and when they bounce back when pressed gently. You can also check them with a skewer.

Allow muffins to cool before storing in an airtight container. With every batch I make I tend to freeze some and keep some out. These are perfect just on their own but also nice with peanut butter, cottage cheese or cream cheese.
