Essentially a gourmet version of the traditional crumb. Easy and super tasty, this is superb for crumbing white fish such as tommy ruff or whiting or even fresh anchovies or sardines.
This makes enough crumb for about 6 fresh tommy ruff fish fillets.
- 1/2 cup almond meal
- 1/2 cup bread crumbs
- ~ 1/3 cup mixed fresh herbs, chopped finely (eg. parsley, dill, oregano)
- The rind of 1/2 a lemon
- A pinch of sea salt & plenty of cracked pepper
- 1/4 cup parmesan, very finely grated
Mix all together in a bowl. To crumb fish, make sure your fillets and clean and dry (I use paper towel). Coat each fillet in egg yolk first then your crumb, and then fry in a pan with butter/and or oil.
