Essentially a gourmet version of the traditional crumb. Easy and super tasty, this is superb for crumbing white fish such as tommy ruff or whiting or even fresh anchovies or sardines.

This makes enough crumb for about 6 fresh tommy ruff fish fillets.

Ingredients:

  • 1/2 cup almond meal
  • 1/2 cup bread crumbs
  • ~ 1/3 cup mixed fresh herbs, chopped finely (eg. parsley, dill, oregano)
  • The rind of 1/2 a lemon
  • A pinch of sea salt & plenty of cracked pepper
  • 1/4 cup parmesan, very finely grated

Method:

Mix all together in a bowl. To crumb fish, make sure your fillets and clean and dry (I use paper towel). Coat each fillet in egg yolk first then your crumb, and then fry in a pan with butter/and or oil.

Gestational Diabetes –

Crumbed fish can be a great option for those with GDM, it just depends on the crumb and what else is served with the fish. This recipe is perfectly suitable. Having 1-3 tommy ruff fillets is a great serve, with a side of salad, veggies and also possibly a small amount of sweet potato. How much crumb you use and how many fillets you have will help you know how much sweet potato/potato to add to this meal (or not to have).
